Baked berry Oatmeal

Ingredients:

  • Nonstick spray

  • 2 1/2 cups of fresh blackberries or blueberries (feel free to use any berries you like)

  • 1 1/3 cups rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon (or ginger, if preferred)

  • A pinch of sea salt

  • 2 large eggs

  • 1/8 cup real maple syrup or agave syrup

  • 1 1/2 cups unsweetened almond milk

  • 3/4 teaspoon vanilla extract

  • 1/2 cup pumpkin seeds

  • 1/2 cup pecans or hazelnuts, roughly chopped

  • 1/4 cup sunflower seeds

Directions:

  1. Preheat & Prepare: Start by preheating your oven to 325°F (163°C). Grease a loaf pan with nonstick spray or butter. Place the berries at the bottom of the pan, spreading them out evenly.

  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon (or ginger), and a pinch of salt. Gently pour this mixture over the berries in the pan.

  3. Combine Wet Ingredients: In the same bowl (now empty), whisk together the eggs, almond milk, and vanilla extract. Pour this liquid mixture evenly over the oats, ensuring the entire mixture is well soaked.

  4. Prepare Topping: In a smaller bowl, mix together the maple syrup or agave syrup with the pumpkin seeds, chopped nuts, and sunflower seeds, ensuring they're all evenly coated. Sprinkle this seed and nut mixture over the top of the oatmeal layer in the pan.

  5. Bake: Place the pan in the oven and bake for about 50 minutes to 1 hour. You'll know it's done when the oatmeal is set and the top is lightly browned and crunchy.
